Hi. I just have one question for you. How are professionals able to shoot on a whim and still get the correct exposure and everything? Is there a technique or is it just skill?

It’s similar to a musician who can just sit down at a piano and play a song.

You do something long enough and know your gear you get faster, more efficient, and better skilled at reading your meter in the camera and knowing how to adjust your camera to give you the results you desire. 

Learn your meter in your camera. Learn what it’s trying to do and how and when to override the meter. Your camera has, typically, three metering modes. Spot. Center. Average. Whatever it’s reading it wants to make it 18% grey. You have to be able to look at what or who you are photographing, know what mode your meter is on, and figure if what the meter is reading is close to an 18% grey or not.

The more you practice the better you’ll be.
